Our Healthy recipe: French-style tuna salad

The French style tuna salad that is presented by this recipe, is a modern, new style, version of the tuna salad nicoise which is a specialty of the Cote d’azur area of France and it can be part of your diet.  The original Nicoise salad clearly states that no cooked vegetables would be used. However this new style tuna salad includes some tasty cooked green beans.

The recipe serves 4; it takes about 5 mins to prepare and 10 mins to cook.

The Ingredients

4 medium free-range eggs

1/3 lbs green beans, trimmed and cut into 2 inches length

2/3 lbs pack little gem lettuce, washed and shaken dry

2/3 lbs tuna in extra virgin oil, drained and flaked

1/2 red onion, finely sliced

4 tbsp fresh French dressing

2 ½ ounces oven baked mature cheddar cheese and garlic croutons

The execution

  1. Place the eggs in a pan of cold water, bring to the boil then reduce the heat and simmer for 8 mins until hard-boiled. Run under cold water to cool, then shell and cut in half.
  2. Meanwhile, cook the beans in a pan of boiling water for 4-5 mins, until tender. Drain well and set aside.
  3. Place the lettuce leaves in a large salad bowl, add the cooked green beans, flaked tuna and red onion. Drizzle with the dressing, then gently toss together to combine.
  4. Top with the hard-boiled eggs and scatter over the croutons to serve
